Writing about the traditional Pedroni balsamic vinegar today is like looking back at the tradition and practice inherited from the same family. To follow a certain sequence, let us now turn our attention to the raw material chosen for the production of "balsamic vinegar": the grapes and in particular "Trebbiano di Spagna", which has always been considered to be of high quality. These grapes have a very good smell and alcohol content, but the vineyards do not produce much and therefore the other winemakers throw them away. The Pedroni family takes care of these vineyards again and thanks to their grapes, they still have an exceptional cooked must, the staple food for their barrels and for the balsamic vinegar project. All of these are the reasons why Pedroni's traditional balsamic vinegar is highly decorated in the only annual competition to nominate the best balsamic vinegar from the Modena region.
