What is D.O.P?
The P.D.O. (Protected Designation of Origin or D.O.P. Denominazione di Origine Protetta in Italian) is the European recognition (Reg. 510/06)  for an agricultural product or food, whose entire production cycle from raw material to final product (processing, preparation, and packaging)—is carried out in a specific territory.
The Chianti Classico P.D.O.
The Chianti Classico P.D.O. for extra virgin olive oil produced in the territory of the provinces of Florence and Siena has been recognized by the European Community Regulation EC 2446/2000, approved by the European Community with regulation EEC no. 2081/92. The production policies prescribe a number of procedures and guidelines that must be followed so that the oil produced can be of European recognition, including bottling and labelling operations. The enforced chemical and physical parameters ensure that the consumer always has high quality oil for its entire shelf life.
The Frantoio cultivar is one of the best known worldwide and widespread throughout the Italian territory, this P.D.O. is the most popular in the world.
In particular, in Tuscany, the popularity gained by the oil of the Frantoio variety is the result of careful quality and marketing work that has been done over the years to acquire export shares of "made in Tuscany".
Thank's for this variety goes to the careful work that the Tuscan people have put in over the years to improve varietal richness of north-central Tuscany of excellence in the territory. The trees of the Frantoio variety, together with the other varieties, are distributed throughout the north-central part of mainly hilly Tuscany.
Organoleptic characteristics of Chianti Classico P.D.O. oils
This territorial morphology creates different micro-climatic areas, that strongly affect the sensory characteristics and the secondary notes of the oils produced. In general, these P.D.O. oils have a fruity olive profile which at the beginning is very intense, evolving into medium intensity.
The colour, which varies from deep green to green with golden highlights and the notes of artichoke and cut grass will surely be noticeable the fruity aromas and piquant, slightly bitter taste.
Olive Oil from Trás-Os-Montes, Portugal
A Trás-Os-Montes olive oil with the D.O.P. (Denominação de Origem Protegida in Portuguese) seal guarantees the consumer that the product has been subjected to a rigorous independent control system, which attests that this product has a different flavor and aroma, and that it has been obtained or processed in a traditional way, only in the defined area.
It is an oil obtained exclusively by mechanical processes, from olives of different varieties and typical of the area, such as Verdeal Transmontana, Cobrançosa, Madural, Cordovil, Redondil, Negrinha, among others.
It is a balanced oil, with the smell and flavor of fresh fruit, sometimes almond and with a remarkable sensation of sweet, green, bitter and spicy.
These olive oils come from olive groves planted in shale lands, which are characteristic of the Trás-os-Montes region. The exceptional geographical and climatic conditions, allow the variety of olives of excellent quality that harvested in their correct state of ripeness, selected and clean, according to traditional methods, make the oil genuine.
Cold pressed, with low acidity and golden color, this precious liquid has a fresh, very pleasant fruit flavor. These characteristics give it the character of a high quality product as can be seen in the brand (certification seal) of genuine olive oil with protected designation of origin "D.O.P. Trás-os-Montes".
This mark on the form of a stamp that is affixed to the producer's packaging proves the conformity of its method of production and processing, guaranteeing to the consumer the origin of the product, the respect and control of all the production and processing rules provided for in the current law. (Standard Disp. 293/93). In this way, the genuineness of Portuguese olive oil is respected, as well as the efforts of the producers of Trás-os-Montes and Alto Douro in recognizing high quality olive oil.
