Moraiolo is a very ancient cultivar and it’s difficult to find it used alone.This variety produces an extra virgin olive oil with the fragrance of fresh aromatic herbs and vegetables, with notes of almond, artichoke and hazelnut, intense vegetal hints and a slightly bitter and spicy flavor.

    Beskrivning

    Since ancient times, when the Benedictine monks took part in the first planting and carved the hills into green terraces sustained by the dry stonewalls, olive trees have found fertile land. It has a unique nature's combinatio of sea and hills that characterize the scenery of the Ligurian Riviera. The sea and the salt impregnates the wood of the olive tree with salty notes that are typical of the extra virgin olive oil of this area. That territory is for sure one-of-a-kind.

    Taste of the herbaceous and slightly bitter flavor of the Moraiolo variety can be characterized by notes of artichoke, rocket and almond. On the palate, this oil has an intense and decisive aroma. This oil has a clear aspect, with medium fluidity and green color. The extra virgin olive oil obtained from “Moraiolo” olives is recommended for raw use on grilled meat, legume and chickpea soups, artichokes and cardoons.
